8 ounces tempeh, cut into 1-inch cubes
2 large sweet potatoes, peeled and diced into 1-inch cubes
2 cloves garlic, minced
3 green onions, thinly sliced on a diagonal
Instructions:
Preheat the oven to 425°F.
In a bowl, combine the smoked paprika, cayenne pepper, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Add the tempeh cubes and toss to coat. Heat the olive oil in a large skillet over medium heat. Add the tempeh cubes and cook until browned on all sides. Remove from heat. Transfer the tempeh to a baking sheet lined with parchment paper and roast for 15 minutes. Remove from oven and set aside.
Add the sweet potatoes to the same skillet you used to cook the tempeh and cook until they begin to caramelize around the edges, about 10 minutes stirring occasionally. Stir in the garlic and green onion whites and continue cooking for 2 minutes more. Return the tempeh to the skillet and toss everything together. Serve warm.

6-8 corn tortillas, warmed
